Birch Tapping Workshop (2.5 hours)

Connect with nature and understand your landscape on this foraging walk with Cowdray's Forager, George.

In this two and a half hour workshop you will learn how to sustainably harvest birch sap, a life giving tonic full of natural nutrients that help bring sustenance to the tree as it emerges from its winter state.

You will learn to choose the right trees and help sustainably tap a birch tree as well as getting to experience this wonderful natural filtered water which can be drunk straight from the tree. George will also explain how to best preserve this incredible resource for use throughout the year. Finally you will be shown how to plug a tap to ensure the tree is not damaged and ensure it can carry on giving us this wonderful bounty for years to come.

George will also briefly touch on foraging for spring vegetables in the local environment to give you a window into the world of wild resources we have all around us.

Workshop attendees meet at Cowdray Hall and will have a short walk to get to the birch trees where the workshop will take place.
